Get to know vegetables

Spring is time to try something new and unfamiliar such as cardoons or zucchini flowers

Spring is back and so are farmers markets. And that means a whole new chance to make friends with strange and unusual vegetables. Or to rehabilitate some old familiars.

But trying something new 鈥 whether it鈥檚 an unfamiliar vegetable or an exotic preparation 鈥 can be intimidating. The best advice is to start slow.

If you like arugula, branch out to watercress. In听baby form, it鈥檚 a perfect salad green, a sturdier, even more peppery alternative to the more ubiquitous arugula. It also makes a听stellar pesto, says Diana Henry, author of the cookbook A听Change of Appetite (Octopus Publishing, 2014). 鈥淚 actually like it better than basil pesto,鈥 Henry says. 鈥淏asil can be quite perfumed. This is a bit more earthy, more peppery.鈥

If you like cabbage, try kohlrabi. A stout bulb with a thick skin, the flesh is crisp like a radish, and as brightly flavoured as cabbage. 鈥淚 predict that kohlrabi鈥檚 going to be the next big thing,鈥 says Martha Rose Shulman, author of The听Simple Art of Vegetarian Cooking (Rodale, 2014), noting that some companies are beginning to package kohlrabi for lunch boxes.

鈥淪hred it to make a slaw or a stir-fry with kohlrabi and some greens,鈥 she says. 鈥淚 recently had a really great salad 鈥 feta, olives, a little diced kohlrabi. It really absorbs the dressing.鈥

Shulman is also a big fan of pea shoots, slender tendrils from the same plant. They taste like peas, but can be treated like greens. 鈥淭hose are just beautiful,鈥 she says. 鈥淚 like to use those in stir-fries and just cook them up and serve them up as a side. They鈥檙e very good with grains.鈥

Cardoons, a member of the thistle family that鈥檚 a foraged food for many Italians, also can be found at some farmers markets. 鈥淐ertainly cardoons are a vegetable that people are mystified with when they do see it,鈥 says Michele Scicolone, whose most recent book is The Italian Vegetable Cookbook (Houghton Mifflin Harcourt, 2014).

鈥淵ou have to blanche it and peel it and then you can bread it and fry it or gratinee it with butter and cheese, and it鈥檚 very tasty,鈥 she says. 鈥淚t tastes like artichoke hearts.鈥

Scicolone also champions zucchini flowers, another Italian specialty that can be chopped for a frittata, tossed in a salad or stuffed with mozzarella and deep fried. 鈥淚t may seem like an exotic delicacy, but to a hungry Italian of a certain era, it鈥檚 a vegetable,鈥 she says.

鈥淲hen I was a kid, my mom would make little fritters with them. We would eat them like that for an appetizer.鈥

Too shy to try? You can still set your sights on new preparations for old standbys.

Henry tosses copious bundles of fresh herbs and edible flowers into salads. She thinly shaves carrots, beets and fennel and dresses them with nothing but lemon, oil and salt. Sometimes carrot is paired with the spicy Japanese radish called daikon.

鈥淐arrot is sweet, but [daikon] has a peppery taste,鈥 she says. 鈥淲hen you mix them together you get an interplay with them.鈥

And don鈥檛 forget about spinach, Shulman says. 鈥淲e鈥檝e gotten so used to bagged baby spinach year round, but there鈥檚 nothing to compare with a lush bunch of spinach that鈥檚 just been harvested,鈥 she says. Blanch it, steam it or hit it with olive oil, garlic and herbs and toss it into a frittata, gratin or quiche.

Smoky Grilled Zucchini

If you鈥檙e more the type to stick with the usual vegetable suspects, we鈥檝e made it easy to at least take them for a spin in a new direction. For zucchini, we鈥檝e given you a simple, but delicious recipe for grilling. And for eggplant, we turn it into a bruschetta topping that packs tons of flavour.

Preparation: 15 minutes

Makes: 6 servings

3 medium zucchini

1 Tbsp olive oil

1/2 tsp kosher salt

1/2 tsp ground black pepper

1 tsp smoked paprika

2 tsp brown sugar

鈥 Fresh limes, for squeezing

Heat the grill to medium-high. Cut the zucchini in half lengthwise, then rub them with the olive oil.

In a small bowl, combine the salt, pepper, paprika and brown sugar. Sprinkle all over the zucchini. Grill the zucchini until tender and charred, five to seven minutes per side. Serve with lime wedges for squeezing.

Grilled Eggplant Bruschetta

This eggplant mixture also is delicious over grilled chicken or haddock.

Preparation: 15 minutes active, plus 2 hours resting

Makes: Eight servings

1 large eggplant, sliced into 1-cm slices

4 Tbsp olive oil, divided

2 medium tomatoes, seeds removed, diced

2 ribs celery, diced

1 orange or yellow bell pepper, cored and diced

1/2 cup fresh basil leaves, torn

Balsamic glaze, to serve

鈥 Kosher salt and ground black pepper

鈥 Baguette or pita, to serve

Heat the grill to medium. Use 2 Tbsp of the oil to brush each eggplant slice on both sides. Sprinkle the slices with salt and pepper. Grill until tender, three to five minutes per side.

Allow the eggplant slices to cool until easily handled, then dice.

In a large bowl, gently mix together the eggplant, tomatoes, celery, bell pepper, basil and the remaining 2 Tbsp of olive oil. Season with salt and pepper. Allow to sit for at least 2 hours for best flavour. Serve on baguette or pita bread and drizzle with balsamic glaze.
